Aebleskivers

Today I made Aebleskivers. Yummers!! For those of you who don't know, an aebleskiver is basically a round pancake ball. I first had them at Tanya's grandmother's house when we went to visit her in Montana like a thousand years ago (well maybe only 20 years ago). I've always remembered them and thought it would be fun to get an aebleskiver pan and make them myself.

As fate would have it, they were selling aebleskiver pans at Fresh Market (the old Albertsons)... and when you buy the pan you get a bag of powdered sugar, a container of syrup, AND a box of butter. I couldn't pass up the deal--especially because I probably would have bought the pan anyway. Actually, probably I like saying aebleskiver as much as I like eating them!

I let the kids each have a friend sleep over last night and was so excited to make aebleskivers for everyone. It took FOREVER to make it according to the recipe-- which included buttermilk and fluffing egg whites until they made "stiff peaks." My first attempt was a disaster as you can see!

I was following the directions to flip them when the tops are covered in bubbles. Apparently I waited too long.

It took a couple of batches but they got better. : ) The kids ate them up and they wanted more, more, more! This may have to be another holiday tradition!

Back in the good old days, when the Vikings were roaming up and down the coasts of Europe and the waters of the Atlantic, one band of these Vikings had been particularly hard hit in battle, so, when they got back on their ship with their horn helmets and shields all dented and banged up, they decided to have one of their favorite dishes to help them regain their strength ---- pancakes!!

In those days they did not have modern conveniences such as frying pans, so, they greased their shields and poured the pancake batter on them over the fire but, guess what!
